Instead of putting in 1/4 cup of cayenne I put in 1/8th and it was still hot. But I love this stuff. I now have about 12 quart bags that I can have a number of meals with it. I talked with Chasey who made this recipe with peanuts instead of almonds. She liked the flavor of our batch better. I have used it both as the main meal and as a side dish. The stats on this stuff is very interesting. But when you actually have to chew your food, it gives your stomach time to (in it's own slow way) tell the brain "Hey buddy, you might want to slow it down; I'm running outta room down here." <br /><br />And while it is thermodynamically true that a Calorie is a Calorie, it is not true psychologically. I am no nutritional expert myself, but in all of my work and understanding of T2 diabetes etiology and the current treatment literature, I'd say this is a sounds recipe ;) I think your low GI/high fiber/healthy fats focus (coming all from whole foods, not powders that fulfill these criteria) is spot on! <br />Just make sure you don't eat the whole pot (reiterating your 2,000 calorie point), because there are still plenty of research camps that will argue that a calorie is a calorie no matter where it comes from, and if you eat too much, it's the over-consumption in any form (even if it comes from this healthy stew) that is dangerous.
